"Following her day out on the water, (Holly) Smith, (chef/owner Cafe Juanita) joins Willows Inn chef Craig Miller in the kitchen to prepare a gourmet feast based around the day's sockeye catch. A smorgasbord of fisherfolk and foodies..crowd around a small table in the inn's posh dining room. There is, of course, one of the sockeye salmon caught earlier in the day, expertly cleaned and filleted by none other than Starks himself. Miller and Smith present it hot out of the Willows' wood-fired stone oven, seasoned with a pinch of shaved fennel and a dash of olive oil. Complementing the main course are a trunip gratin and an eggplant tian crafted from produce harvested from Starks' organic garden earlier in the day. ..With a clink of wine glasses, everyone settles in for a local, sustainable and downright tasty meal."
